Mesmerising light, intense and mineral as the pumice from the volcano. This is a beautiful and truly mineral white.
Grapes: Malvasia delle Lipari 60%, Carricante 30%, other native grapes 10% Alcohol: 13.5% Sulphite: 30mg/L
Terroir: Sandy, volcanic soil rich in trace elements.
Vinification: The grapes are harvested in late August/early September and then pressed in a pneumatic press. No clarification of musts, only static decantation at 16°C, fermentation at about 20°C in steel tanks (Malvasia) and barriques at the 3rd or 4th stage (Carricante) with batonnage and aging on lees for about 6 months. The wine is decanted repeatedly to obtain natural clarification and then placed in bottles.
Tasting and pairing: Fruity with floral hints. Ideal acidity and harmonious taste. Nuances of freshly cut grass and nettle. Extremely elegant, pure and intense with a closure of hazelnut and moss. Very long and persistant - The “mineral” definition! Goes well with appetitizers, fish and pastas or risotto or soup with light sauce or vegetables. Try with sushi!
Delicate and elegant. This is a dry ruby red wine with purple highlights.
Grapes: Corinto Nero 100%. Alcohol: 13%. Sulphite: 78mg/L.

Vinification: Hand picked grapes. Fermentation takes place in barrique with at least 10 days of maceration, then the wine is racked and transferred in 500 L barrels where malolactic fermentation takes place. After 1 year of ageing is finally bottled.
Tasting and pairing: On the nose there is ripe red fruits, with hints of vanilla and anise. The taste is savoury, harmonic, remarkably persistent, spicy and slightly tannic.

Grapes: Malvasia delle Lipari 95%, Corinto 5%. Alcohol: 13%. Sulphite: 105mg/L.

Vinification: The grapes are harvested in late August/early September and arranged for about 10 days on special racks designed specifically for the drying of our grapes. The grapes are inspected, selected and turned on a daily basis. direct pressing of the grapes in a pneumatic press. Clarification of musts, exclusively by static decantation at 20°C, followed by fermentation in oak barrels. A slow fermentation process that continues for months until it is naturally complete. The wine is decanted repeatedly to obtain natural clarification and then placed in bottles.
Tasting and pairing: Complex hints of apricot, dried rose and white fig. The taste is a perfect balance between sweetness, acidity and minerality.
