Grape: Rebula (Ribolla Gialla) 40%, Pinot Grigio 30%, Sauvignon Blanc 30%. Alc: 12.5%. Sulphite: <50 mg/L.

Late harvest, hand picked, short vine-to-fermentation times (max. 2h). Primary fermentation in large tanks on natural yeasts obtained from the same pre-harvested grapes (5%). Secondary fermentation in large wooden barrels on the lees for four ½ years. No racking. No sulphur or any other preservatives used before bottling.

Tasting and pairing

Bright straw yellow in the glass. On the nose white peach, pineapple, tomato leaf and green pepper, mineral, lilac and vanilla. A fruit-juice type quality on the mouth with the Sauvignon showing through with more citrus/lemongrass and touches of a pine note and peppermint in the finish. Try with Asian food, soups, risottos.
