Grapes: Corinto 60%, Nero d’Avola 30%, other native red and white varieties 10%

Alcohol: 12% Sulphite: 30mg/L

Terroir: This rosé originates from vines that grow on the ancient Quarries of Caolino. The grapes are harvested in mid-September. Sandy, volcanic soil rich in trace elements.

Vinification: Direct pressing of the grapes in a pneumatic press. No clarification of musts, only static decantation at 16°C, fermentation at about 20°C in steel tanks on the lees for about 3 months. The wine is decanted repeatedly to obtain natural clarification and then placed in bottles.

Tasting and pairing: This is a blush wine with strong hints of berries and an ideal acidic and mineral balance. A rosè that speaks only with truth: the nose is a fine mix of rose, cherry with hints of almond. The mouth is spectacular, finesse is the right word, but with again the mineral profile of the island. Good with appetitizers, pasta/risotto with light sauce or vegetables. Also perfect with fish, even grilled, and white meat.
