Late harvest, hand picked, short vine-to-fermentation times (max. 2h). Primary fermentation in large tanks on natural yeasts obtained from the same pre-harvested grapes (5%). Secondary fermentation for 3.5 years in 220 liter French oak barrels on the lees, no racking. No sulphur or any other preservatives used before bottling.

Tasting and pairing

Pale gold in colour. A dazzling nose of honey and candied kumquat. The flavors run deep, layering acacia, smoked tea, lemon and cut grass over a creamy texture. With air it grows bright, the acidity keeping the flavors energetic through the finish. Pairing ideas: grilled lobster, baked white meat, stewed cuttlefish, semi-hard cheese.
