Late grape harvesting, hand-picked with a short period between the picking and fermentation – 2 hours maximum. Beginning of fermentation in large fermentation tanks with natural yeast picked out from the same grapes harvested during pre-harvesting (5 %). Ageing in 220 L French oak barrels on its lees for 18 months. Until it is bottled no sulphur or any other conservation additive is used.

Tasting and pairing

A nose of ripe apple, pear, banana, citrus and in the back vanilla. Elegant, full, fresh are the attributes in the mouth. Great with trout or salmon, as well as oysters. Serve chilled 9-10°
