Late grape harvesting, hand-picked with a short period between the picking and fermentation – 2 hours maximum. Beginning of fermentation in large fermentation tanks with natural yeast picked out from the same grapes harvested during pre-harvesting (5 %). Maceration takes place from 3 to 4 weeks till the completion of fermentation until the cap of grape skins sinks to the bottom of the tank and clears the wine naturally. Quiet fermentation is completed for up to 4 years in 220 L French Oak barriques where the wine matures on its lees without decanting. Until bottling no sulphur or any other conservation additive is used.

Tasting and pairing

Hints of sandalwood and rosepetal lace this creamy, delicate Pinot, accenting crushed black raspberry and cherry fruit, licorice and spicebox. Finely balanced and aromatic throughout to the lasting, lightly tannic finish. Requires savoury dishes.

James Suckling score for the 2008 vintage: 93.
