Vinification: Short cold pre-­fermentation skin maceration followed by low­ temperature ageing on the fine lees post-fermentation. All the processes are manual, from the harvest to the reception at the winery and the grape selection, as well as de-stemming and the delicate pressing with basket press.

Tasting and pairing: A young fruity wine, very scented on the nose, powerful with nuances of aromatic herbs such as the green fennel. Great prominence of green apple, pear and tropical pineapple with notes of jasmine. Intense end with light mineral notes. Pairs well with creamy cheeses, fish and seafood.
