Medium bodied wine yet complex and lively. It is made from Sumoll which almost became an extinct Mediterranean grape at the end of the 19th century, of which only a few hectares still exist.

Grape: Sumoll 100%.

Alcohol: 13.5% Sulphite: 83 mg/L.

Terroir:  Slate (Licorella) Vine age: 60 years.

Vinification: Manual selective harvest in 20 kg cases; grapes transported to the winery in refrigerated trucks; de stemming and cold vatting; cold skin maceration for 45 days; spontaneous fermentation with indigenous yeast is carried out in open polyester containers, with daily manual pigeage for the extraction.

Gentle pressing with basket press followed by 14 months ageing in new French oak barrels and 24 months in bottle.

Tasting and pairing: It has an intense ruby red colour, a balmy scent of fresh cherries and toasty cedar which is framed by notes of Mediterranean herbs. On the palate it is spicy­, mature and elegant, with a vivacious acidity that brings freshness.  Cured meats, red meats, game and stews.
