A stunning Corinto red. On the nose there is cherry mixed with salty and earthy nuances with a discrete spice of black pepper. Very juicy taste, but still agile and fresh with the saline mark of the volcanic soil giving it great elegance.

Grapes: Corinto 60%, Nero d’Avola 20%, other native grapes 20%.

Alcohol: 13.5% Sulphite: 30mg/L

A strong and decisive character, this is Tenuta di Castellaro's finest, as brilliant as the fire and the sun that shaped the lands. The finest expression of the varieties that bring this wine to life.

Terroir: Sandy, volcanic soil rich in trace elements.

Vinification: The grapes are harvested in late August/early September, then de-stemmed and pressed. Red vinification process, without temperature control, long maceration with grape skins and some whole grapes. Wine is drawn off from the vat and transferred to barrels to allow for malolactic fermentation. After about eight months it is drawn off in a steel vat. No must clarification, only static decantation. Wine is decanted repeatedly to obtain natural clarification before bottling.

Tasting and pairing: Deep ruby red colour. The characteristic bouquet of fruit. Ideal alcohol content and structure. Pleasant but determined, the nose is cherry mixed with salty and earthy nuances with a discrete spice of black pepper. The taste is very juicy but still agile and fresh with the saline mark of the volcanic soil giving it great elegance. Serve along side savoury sauces and meat dishes.
