Vinification: Cold pre-fermentation skin maceration and subsequent ageing on fine lees, after fermentation at low temperatures. We use sulphites at minimum possible levels, ageing the wines with fine lees for 60 days. Fine lees act as natural antioxidants. All the processes are manual, from the harvest to the reception at the winery and the grape selection, as well as de-stemming and the delicate pressing with basket press.

Tasting and pairing: A young fruity wine, very scented on the nose, powerful with nuances of aromatic herbs such as the green fennel. Great prominence of green apple, pear and tropical pineapple with notes of white flowers and jasmine. Intense end with light mineral notes. Pairs well with creamy cheeses, fish and seafood. Any vegetable and green salad would pair well too.
